Grassfed Goodness Smash Burger

This is more about a technique than a recipe... cooking your grass-fed burger on a cast iron griddle or pan with this "smashing" technique will give you a delicious,  juicy burger with crispy edges! These burgers cook super quick and are a family favorite.

What you need:

1. Cast iron griddle, cast iron pan or a Blackstone grill

2. Burger press, bacon press, or metal spatula with a piece of parchment paper

Ingredients:

Makes 4 quarter pound burgers.

1. 1 lb. grass-fed ground beef

2. Salt and pepper or seasoning of your choice

3. Grass-fed butter, grass-fed tallow or lard

4. Burger buns

5. 4 slices of Cheese 

6. Any toppings you like

 

Instructions:

1. First thing, slice and butter the buns.

2. Preheat the grill or cast iron pan to medium-high heat.  You can use a cast iron griddle on top of the grate on your grill or cook them inside on your stove, or my favorite on a Blackstone grill. If you are using a burger or bacon press, put in on the pan/griddle to preheat also. 

3. Divide the ground beef into 4 equal pieces and form into balls. Sprinkle with your choice of seasoning, I usually just use salt and pepper because it is so flavorful it doesn't need anything else. 

4. Toast the buttered buns on the griddle until golden brown and set aside. This extra step makes the burgers extra delicious!

5. Melt some butter, tallow or lard on the griddle. Then,  working in batches depending on the size of your griddle, place the burger balls in the pan and smash them using the HOT press or a spatula with parchment paper (so it doesn't stick). Push the burger down with the press about 10 seconds,  until its thin and larger then your bun (because it is going to shrink). Do not press more than once, otherwise you will lose all those juices you are sealing in!  

6. Have your cheese ready.... Cook just 2-4 minutes and then flip the burgers with a metal spatula. Add your cheese to   the burger and cook 2-3 more minutes. 

7. Remove burgers from griddle, cover and let rest a couple minutes. 

8. Assemble your burgers with any toppings you like...and then... enjoy your juicy, crispy, Grassfed Goodness burger!
